Spiced Chicken Gravy With Cloves And Cinnamon

Ingredients

Chicken ingredients

– 1 tablespoon. dark roux

– 1 1/2 cups. chicken broth

– 1/4 cup. all-purpose flour

– 1 teaspoon. floor cinnamon

– 1/4 teaspoon. whole cloves

– four chicken thighs, skin-removed

– half onion, chopped

– 1 cup. water

– salt

– pepper

Gravy Ingredients

Ingredients:

– 1 entire chicken (3-4 pounds)

– half of cup chopped onion

– half cup chopped celery

– 1/2 cup chopped carrots

– half of teaspoon dried thyme

– half of teaspoon dried rosemary

– 1/4 teaspoon floor cloves

– 1/4 teaspoon floor cinnamon

– 1/4 teaspoon salt

– 1/4 teaspoon black pepper

– 2 cups chicken broth

– half of cup all-purpose flour

– 1/4 cup cold water

Gravy Ingredients:

– 1 tablespoon chopped fresh parsley (optional)

Instructions

Chicken

Ingredients:

– 1 complete chicken (about 3 pounds)
– 1 onion, chopped
– 2 carrots, chopped
– 2 celery stalks, chopped
– four cloves garlic, minced
– 1 tablespoon ground cumin
– 1 tablespoon ground coriander
– 1 teaspoon floor cinnamon
– half of teaspoon ground cloves
– 1/4 teaspoon floor black pepper
– 1/4 cup all-purpose flour
– 3 cups chicken broth
– half of cup heavy cream (optional)
– Salt and pepper to taste

Instructions:

1) Preheat oven to 350 levels F (175 levels C).
2) Place the chicken in a roasting pan and season with salt and pepper.
3) In a large skillet, sauté the onion, carrots, celery, and garlic in olive oil until softened.
4) Stir in the cumin, coriander, cinnamon, cloves, and black pepper.
5) Sprinkle the flour over the greens and cook for 1 minute.
6) Gradually whisk within the chicken broth.
7) Bring the gravy to a simmer and cook dinner till thickened, about 5 minutes.
8) Pour the gravy over the chicken and roast for 1 hour, or till the chicken gravy is cooked via.
9) Let the chicken rest for 10 minutes before carving.
10) Serve the chicken with the gravy.

Gravy

– 1 tbsp vegetable oil

– 2 tbsp plain flour

– 700ml chicken stock

– 1 bay leaf

– 6 cloves

– 1 cinnamon stick

– Salt and black pepper

– 2 tbsp chopped fresh parsley (optional)

1. Heat the oil in a large saucepan over a medium warmth.

2. Add the flour and prepare dinner for 1 minute, stirring continually.

3. Gradually whisk within the chicken stock till smooth.

4. Add the bay leaf, cloves, cinnamon stick, salt and black pepper to style.

5. Bring to a simmer and cook dinner for quarter-hour, or till thickened.

6. Strain the gravy into a clear saucepan and discard the solids.

7. Add the parsley, if utilizing, and serve.
