Gluten-Free Chicken Enchiladas: A Delicious Alternative

– 12 corn tortillas (or 6-inch gluten-free flour tortillas)

– 1 small white onion, chopped
– 1 small green bell pepper, chopped
– 1 (15 ounce) can black beans, rinsed and drained
– 1 (15 ounce) can corn, drained
– 1 half teaspoons chili powder
– 1 teaspoon floor cumin
– 1/4 teaspoon salt
– 1/4 teaspoon black pepper

– 2 tablespoons olive oil
– 1/4 cup chopped white onion
– 2 cloves garlic, minced
– 1 (15 ounces) can tomato sauce
– 1 (15 ounces) can tomato paste
– 1 teaspoon floor cumin
– 1 teaspoon ground oregano

– 1/4 teaspoon black pepper
Instructions
To Make the Enchilada Sauce:
In a large saucepan, whisk collectively the tomato sauce, enchilada sauce, chili powder, cumin, oregano, and salt and pepper to style.
