One of my favorite summer salad combinations is watermelon with feta, balsamic, red onion and arugula. It”s so refreshing and light, and perfect to make in jars to take to the beach or park (I keep them chilled in cooler).
INGREDIENTS
4 cups diced seedless watermelon
3 oz crumbled feta
3 cups baby arugula
1/4 small red onion, chopped
2 tbsp balsamic vinegar
2 tbsp extra virgin olive oil
1/8 tsp kosher salt
fresh black pepper
INSTRUCTIONS
Divide the dressing equally between 4 pint sized glass jars. Divide and layer the onion, feta, watermelon and finish with 3/4 cup arugula.
