Ingredients
8 ounces pork sausage
2 cups red & yellow diced sweet peppers
10 Eggland’s Best eggs
1/2 cup milk 1%
1/3 cup Eggland’s 100% Liquid egg whites or 2 egg whites
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup pepper jack cheese
optional: fresh chopped cilantro green onions, salsa, sour cream
Instructions
Preheat oven to 350 degrees.
Brown sausage in a medium hot skillet until cooked through.
Using a slotted spoon remove and set aside.
Using same skillet, saute peppers until softened.
In a large bowl whisk eggs, egg whites, and milk.
Divide sausage and peppers among a 12 capacity muffin tin.
Evenly pour egg mixture into each then sprinkle a heaping tablespoon of cheese unto each.
Use a fork to stir mixture in each muffin cup.
Bake for 25-30 minutes.
