Crock Pot Peppermint Fudge: [Gluten Free & Dairy Free]

Ingredients
2 1/2 cups sugar-free chocolate chips such as the brand Lily”s
1/3 cup canned coconut milk
2 teaspoons liquid peppermint stevia or plain
2 teaspoons peppermint extract
a dash of salt
Instructions
In a small bowl mix together all ingredients then add to a small 3 or 4 quart crock pot.
Cover and cook on low for 2 hours.
Uncover and cook 1 more hour.
Stir well for 5 minutes.
Line a 1 quart baking dish with parchment paper and pour in chocolate. Refrigerate for 1 to 2 hours or until hardened.
Lift onto cutting board and cut into 18 pieces.
